Recipe Ingredients
- Chicken: This recipe calls for a little over 2 pounds of boneless skinless chicken breasts. If you have extra chicken, try crockpot chicken pot pie.

- Tomatoes: You’ll need 1 can of diced tomatoes and it won’t need to be drained.
- White Onion: This will be sliced and slowly cooked with all of the other ingredients.

Recipe FAQs
Can I substitute the boneless breasts?
Boneless skinless chicken thighs can be substituted for chicken breast. However, keep in mind that the cooking time may need to be adjusted. You’ll want to cook it until you have tender chicken.
How do I store crock pot chicken recipes like this?
Store leftovers in the refrigerator for up to 3-4 days in an airtight container.
Can I freeze slow cooker balsamic chicken?
Yes, you can freeze any leftover of the Slow Cooker Balsamic Chicken in an airtight freezer-safe container for up to 3 months. Thaw in the refrigerator overnight before reheating in the microwave or on the stovetop.
Can I put frozen chicken into the crockpot?
I recommend defrosting the chicken for slow cooker recipes to ensure it is cooked thoroughly.
What can I add to make this a hearty chicken dinner?
This is a chicken dinner that has all it needs; however, you can always add garlic salt, a splash of olive oil, crushed tomatoes, mushrooms, and other veggies. You can also make an herb mixture and extra sauce to put on top for serving.
Does the type of balsamic vinegar I use matter?
Not all balsamic vinegar tastes the same. It truly depends on the brand and your preference of taste. Use what you have on hand. If all you have is balsamic glaze, that works well in this recipe too.
Can I use my Instant Pot?
You can pressure cook the boneless chicken breasts or boneless chicken thighs, but you will need to use a slow cooker or your oven for this meal.
